I like to incorporate a variety of New Year’s Eve themed desserts each year when we celebrate. When I think of New Year’s Eve food I think of appetizers, grab food, and snack-y things. Oh and champagne!

To me, it makes that holiday extra special if you serve a treat that’s festive.

How to melt caramel for pretzels

For ease and convenience I used store bought caramel bits and heavy cream to make my caramel sauce. If you have a family favorite homemade caramel sauce recipe, feel free to use that!

Caramel bits can be found in the baking aisle of your grocery store.

In a small pot over low heat on the stove, combine the caramel bits and heavy cream. Stir frequently until the caramel is fully melted. This may take 5-10 minutes.

How to dip pretzels in caramel

I recommend pouring the warm caramel into a tall glass, that way you can easily coat the entire pretzel by dipping it into the caramel.

You will need to work quickly as the caramel will cool and become thicker the longer it’s off the heat. If the caramel in your glass becomes too thick, place the glass in the microwave for 30 seconds on 50% power to re-warm it.

Place the dipped pretzels on a silicone mat or parchment paper lined baking sheet.

This is 100% normal AND it’s fixable!

Once the caramel is set, take each rod and gently roll it either between your palms or roll it on the silicone mat. This will create pretzel rods that have a nice rounded shape.

How to dip pretzel sticks in chocolate

I used vanilla almond bark for my white chocolate coating, but white candy melts are also great!

Similar to dipping the pretzels in caramel, melt the chocolate and transfer to a tall glass. Dip each pretzel rod into the melted chocolate and place back on the silicone mat to set.

When to add the gold shimmer

Once the chocolate is fully set, use edible gold spray paint to give the pretzels a perfect golden finish! I used Wilton’s gold color mist. You can find this product in stores at Michaels or Walmart too!

How to store dipped pretzel rods

Store these caramel chocolate dipped pretzels in an airtight container on the counter (out of the sun) for up to 5 days.

New Year’s Eve Pretzel Rods

Make New Year’s Eve pretzel rods dipped in caramel then in white chocolate. Spray them with edible color mist to make them really pop for the perfect New Year’s Eve snack that kids and adults will love! 

Ingredients

  • 24 pretzel rods
  • 1 package caramel bits, 11 oz
  • 3 tbsp heavy cream, can substitute milk or water
  • Vanilla almond bark, 12 oz
  • Gold color mist

Instructions 

  • Line a baking sheet with a silicone mat or parchment paper. Set aside.
  • In a small pot over the stove on low heat, combine the caramel bits and heavy cream. Stir frequently until the caramel is melted. This may take 10 minutes. 
  • Pour the caramel into a tall drinking glass. Dip one pretzel rod a time into the caramel, allow the extra to drip off, then place the pretzel on the silicone mat to set. Repeat until all pretzels are dipped in caramel. Allow the caramel to cool and set completely before dipping in the chocolate. To speed up the cooling process, you can place the pretzels in the fridge.
  • The caramel will pool around the bottom of the pretzel as the caramel cools, this is normal and fixable! Once the caramel is set, take each rod and gently roll it either between your palms or roll it on the silicone mat. This will create pretzel rods that have a nice rounded shape. 
  • Cut the vanilla almond bark into smaller pieces and place in a microwave safe bowl. Microwave on 50% power for 2 minutes, stirring after each minute. Return to the microwave for 30 second intervals on 50% power until melted. 
  • Pour the almond bark into a tall drinking glass. Dip one pretzel rod at a time into the chocolate, allow the extra to drip off, then place the pretzel on the silicone mat to set. Repeat until all pretzels are dipped in chocolate. Allow them to cool and set completely before adding the gold mist.
  • Spray gold color mist over the white chocolate to give the pretzels a shimmery gold look. Store these caramel chocolate dipped pretzels in an airtight container on the counter (out of the sun) for up to 5 days.
