A simple no bake recipe for butterscotch marshmallow bars with coconut and walnuts! This is a classic holiday no bake treat!
I’m not the biggest fan of butterscotch.
I’m actually the type of person who would prefer to make special k bars without the butterscotch chips.
But, oh man, has my mind changed about butterscotch when it comes to these bars!!
I’m convinced that it has to do something with the combo of peanut butter, marshmallows and butterscotch all together that make the butterscotch less butterscotch-y.. which in my opinion is usually too sweet. Instead all I taste is creamy, marshmallowy goodness with a subtle crunch from the walnuts.
This recipe can go by a lot of different names – peanut butter marshmallow bars or squares, no bake nut goodie bars, and confetti squares, although I think those are generally made with the fruity marshmallows.
Whatever you choose to call them, they are a popular dessert to make for the holidays and to include in cookie tins!
Ingredients
- butterscotch chips
- creamy peanut butter
- butter
- mini marshmallows
- walnuts
- shredded coconut
It’s a quick recipe that comes together within 5 minutes and probably takes about an hour to set before you can cut them into bars. But you can speed up the cooling time by sticking the bars in the fridge! Or if you’re a midwesterner, you can put them in your garage or on your porch, which acts as a second fridge all winter season.

How To Make Peanut Butter Marshmallow Bars

- Remove from the heat and stir in coconut, walnuts, and marshmallows.
- Pour the mixture into an un-greased 9×13 inch pan and spread to even it out. Put the pan in the refrigerate to set for 1 hour, then cut into bars.

You can also omit the walnuts and coconut if desired.

Instead of butterscotch chips may I use milk chocolate chips & no marshmallows
Can I make these without the butterscotch morsels I am not a fan of butterscotch so what could I use instead thank you
You could use peanut butter chips or chocolate chips.
Will try. Sounds delicious.
Could I leave out mini marshmallows if so what would you swap them with instead thanks
Hi Ann! The mini marshmallows are critical in this recipe as they are the bulk of the recipe. I don’t have a substitute to offer that would give the same texture.
Ps could you give the cup measures in grams please I want to get the recipe right thanks x
Has anyone tried with the peanut butter or chocolate chips instead of butterscotch?
I didn’t find any measurements….
Did I overlook them?
They are in the recipe card!
Can these be made with caramel bits instead of butterscotch chips?
Love this recipe 😋
I made these today for my daughters work! They were a BIG hit. :)
I used salted peanuts that I roasted in the oven and cooled before I chopped them up.
Such a fun and easy recipe. No problem with melting marshmallows because I didn’t let the mixture get too hot. I melted butter (mostly) first, then added the chips and peanut butter and let them melt down. Then took off the heat and added the nuts and marshmallows. I didn’t have coconut but they still turned out sooooo good!!
Definitely going to make these again! Thank you for the recipe!
Could you add some red maraschino cherries 🍒 to add a little festive colour?
Maybe the candied ones, but the regular ones in the jar with juice wouldn’t hold up well.
