Rainbow Popsicles
We have a double whammy! Last week we shared our recipe for rainbow smoothies and today weāre sharing a recipe for rainbow popsicles! One fun recipe – 2 great ideas!
I like to think of it like muffins and bread. You can make banana bread muffins or banana bread out of the same batter. Same thing here – rainbow smoothie or rainbow popsicles but the base recipe is the same!
In the rainbow smoothie recipe I talk a lot about how to make the smoothies, what kind of ingredients youāll need, and how to layer the smoothie.
Today Iām going to talk about taking this recipe from a smoothie and making it into a popsicle!
In order to make popsicles at home youāll need a popsicle mold and popsicle sticks. I rounded up 8 fun molds that will definitely get us excited about popsicle season!

#7 – Squeezable mold – with a cap so you can save the popsicle for late!
#8 – Double popsicle mold – 2 popsicles in one, share one or eat them both!
So fun, I think I want all of them now!!
Tips for Making Rainbow Popsicles
Layering the smoothies in the mold is easy. Use a spoon or tablespoon to scoop the smoothie mixture into the mold. Itās natural for the layers to blend a bit, but I have noticed that spooning the smoothies into the mold versus pouring the smoothie in from a glass leaves better results.
Once the molds are filled, freeze the popsicles overnight.
To get the rainbow popsicles to release from the mold, fill your kitchen sink with room temperature water. Place the mold in the water, making sure the water does not go above the top of the mold.
Allow the mold to sit in the water for a few seconds.
Begin to wiggle a popsicle free. If it feels tough, allow them to set in the water a few more seconds.
Once all of the popsicles are removed from the mold, enjoy or wrap the extras in plastic wrap and return to the freezer.
Here’s the best part, most likely you’ll have leftover smoothie (unless you’re making 30+ popsicles at one time) so you can enjoy a rainbow smoothie while you wait for your rainbow popsicles to freeze!
Rainbow Popsicles
Ingredients
RED LAYER
- 1 frozen banana
- 1/2 cup greek yogurt, vanilla or plain
- 1/2 cup frozen raspberries
- 1/2 cup frozen strawberries
- water or liquid for blending
ORANGE LAYER
- 1 frozen banana
- 1/2 cup greek yogurt, vanilla or plain
- 1/2 cup frozen peaches
- 1 small orange
- 1/4 cup frozen mango
- water or liquid for blending
YELLOW LAYER
- 2 frozen bananas
- 1/2 cup greek yogurt, vanilla or plain
- 1 cup frozen pineapple
- water or liquid for blending
GREEN LAYER
- 2 frozen bananas
- 1/2 cup greek yogurt, vanilla or plain
- 1 handful (or more) spinach
- 1 cup frozen pineapple
- water or liquid for blending
BLUE LAYER
- 2 frozen bananas
- 1/2 cup greek yogurt, vanilla or plain
- 1 cup frozen pineapple
- small amount of blue food coloring
- water or liquid for blending
PURPLE LAYER
- 1 frozen banana
- 1/2 cup greek yogurt, vanilla or plain
- 1 cup frozen mixed berries
- water or liquid for blending
MAGENTA LAYER
- 1 frozen banana
- 1/2 cup greek yogurt, vanilla or plain
- 1/2 cup sliced canned beets
- 1 cup frozen strawberries or raspberries
Instructions
FOR EACH SMOOTHIE
- Place all the ingredients in a blender and blend until smooth. Add more liquid to help it blend if it's too thick.
- Transfer the smoothie to a bowl or container, rinse the blender and prep the next smoothie.
TO ASSEMBLE THE RAINBOW POPSICLES
- Carefully layer each color smoothie in a popsicle mold in rainbow order.

Notes
This recipe will make A LOT of rainbow popsicles! You can definitely cut each smoothie recipe in half if you'd prefer to not have tons of extra smoothie. If you are opposed to using a small amount of blue food coloring to achieve the blue layer, it's totally fine to skip that layer! If you want to go the all natural route, here is a tutorial for how to makeĀ natural blue food coloring, or you can buy natural blue food coloring hereĀ or here as well.

Beautiful! But why use blue food coloring instead of blue berries?
I tried to make a blue smoothie using just blueberries, yogurt, and a banana. As much as I wanted it to be blue, it was purple. So to get the blue layer to actually be blue, I simply repeated the yellow layer (since itās the lightest color) and added blue food coloring. A rainbow just isnāt a rainbow without blue!
Can you make the smoothies without bananas and still make the Popsicles? My daughter is allergic to bananas.

I made them with no bananas or yogurt. Canāt say it was easy but it worked. Ā blended not juiced: strawberry, orange, kiwi, blueberry with a little grape juice if u want
How did you spoon the first few colours into the molds without getting the mixture on the sides of the mold? When I tried to spoon them in, or even pipe them in with a sandwich bag, the layers on the lowest part of the mold would inevitably end up smearing a bit on the sides.
Mixing of the layers is natural – using smoothie mixtures that are thicker will help them from blending too much.
Hi! Can you explain how you spooned the layers in so neatly? Whenever I’ve done multi-layered popsicles without freezing each layer first, I’ve had difficulty getting the first/bottom layers into the moulds without smearing the colour on the sides of the mould. I’ve even tried piping the layers in with a sandwich bag without much greater success. How did you get yours so cleanly layered?
Hi Frai! I just used a spoon to spoon the smoothie into the mold. Having thicker smoothie mixtures will help from them blending too much.

Do the beets give a strong beet taste to the pops? We make juice at home, and my daughter doesn’t like anything with beets in it. She really wants to make these rainbow pops though!!!!Ā
I just added beets until I was fine with the colour. It took about 4 slices, so it was less than in the recepie. It tasted very subtle, your daughter will like it!Ā

Hi Ashley! While yogurt is a primary ingredient in these popsicles, you could try to make them without the yogurt. You may have to add in more liquid for blending.

These are SO gorgeous!!
Found it much easier and got cleaner layers when I used a straw to form the layers. I used a little bigger straw than the normal size, and then you suck the smoothies up in the straw and then gently blow it out in the mold ;) No mess on the side of the mold!Ā

These looked so beautiful, my daughter couldnāt wait to make them! However after following the recipe for a few layers we found that each layer was pastel. Having made ice pops before, I have found that dairy products do produce pastel colored pops and those with fruit/juice produce more vibrant colors.Ā If the pops in the photos have yogurt in them, it isnāt FAR less than the 1/2 cup called for in the recipe. In future, I think Iāll use fresh fruit and maybe 2tbsp of yogurt per layer to get more vibrant colors.Ā
YES! We just made them tonight and our layers are definitely pastel, not vibrant. Thanks for the tip on how to make them more vibrant next time!
