The best miami vice mocktail popsicles! Half strawberry daiquiri half pina colada! These are tropical, lava flow popsicles that everyone can enjoy since they are non-alcoholic.

Yes, they can be very messy, melt within minutes, and you must work fast, but they are gorgeous!
And I also love eating popsicles. I’ll let you know that I am a sucker for bomb pops, those are my favorite store bought ones. I wish they made a full popsicle from just the white part of the bomb pop – that’s the best layer!!
I can’t believe I haven’t shared a popsicle recipe since I shared these rainbow popsicles. I decided to do a popsicle take on these miami vice mocktails I shared in 2016.
If you’re not familiar with a miami vice (also referred to as a lava flow), it’s a drink – a strawberry daiquiri and a pina colada layered in one glass! It can be alcoholic or non-alcoholic. It’s basically the best of both worlds in terms of an “fru fru girly” beverage.
In order to make popsicles, you’ll need a popsicle mold. This mold from amazon is the one I used to make these popsicles.
How to releases popsicles from popsicle mold
To get the popsicles to release from the mold, fill your kitchen sink with room temperature water. Place the mold in the water, making sure the water does not go above the top of the mold.
Allow the mold to sit in the water for 60 seconds.
Begin to wiggle a popsicle free. If it feels tough, allow them to sit in the water longer, checking every 30 seconds or so. You don’t want the popsicles to become too melty. You just want to warm them up enough to release them from the mold.
Once all of the popsicles are removed from the mold, enjoy them or wrap them in plastic wrap and return to the freezer to eat later!
Tip
If you don’t like the texture of pineapple, opt to use pineapple juice in place of the crushed pineapple in the recipe.

Miami Vice Mocktail Popsicles
Ingredients
PINA COLADA LAYER
- 1 can crushed pineapple, 20 oz
- ⅓ cup coconut milk, the canned kind
- ¼ tsp coconut flavor, like extract, optional
STRAWBERRY LAYER
- 2 cups strawberries, fresh or frozen
- ¼ cup sugar
- ½ cup water
Instructions
- In a blender combine the crushed pineapple (you can substitute pineapple juice), coconut milk and the optional coconut extract. Blend on high until smooth. Transfer this mixture to a bowl and rinse the blender.
- In a blender combine the strawberries, sugar and water. Blend on high until smooth.
- One at a time, gently pour the 2 mixtures into the popsicle mold. Use a knife or popsicle stick to slightly blend the layers. Place the cover on the popsicle mold and add popsicle sticks.
- Allow the popsicles to freeze overnight.
