Enjoy dessert for breakfast with this creative ice cream cone waffle recipe! Use melted ice cream in the waffle batter and cut Belgian waffles into the shape of an ice cream cone for dessert waffles that are totally acceptable to eat for breakfast!

I’ve always enjoyed celebrating holidays with themed food. Growing up my mom would make us green eggs and green milk for St. Patrick’s Day, and when I was working as a nanny first out of college I’d gather up the kiddos and make pink pancakes for Valentine’s Day or halloween themed snacks for Halloween. My love for themed food runs deep! I’m super excited to be able to share these traditions with our baby girl as she grows up and make those holidays special for her. 

It’s also fun to celebrate the smaller holidays, like national cookie day, and other food related holidays! If you google it, you’ll find out that almost every day is a food holiday. 

I’m partnering with Hudsonville Ice Cream to celebrate Eat Ice Cream for Breakfast Day on February 6th. I’m celebrating with Hudsonville by creating a recipe that incorporates ice cream for breakfast to sweeten your morning!

I came up with a fun ice cream cone waffle concept that everyone in the family can be a part of making. Not only do you turn the waffles into an ice cream cone shape, there’s ice cream IN the waffle batter! 

For this recipe I used Hudsonville’s Limited Edition Cinnamon French Toast ice cream that is made with a caramel cinnamon ice cream base with cinnamon shortbread pieces and ribbons of waffle cone and icing.

All of Hudsonville Ice Cream’s Limited Edition flavors are seasonal and only available for a short time, so you’ll want to find them in your nearest grocery store as soon as possible!

Ingredients

  • all purpose flour: gives the waffles structure
  • baking powder: adds lift, making them fluffy
  • salt: enhances the other flavors
  • cinnamon: adds warmth, you can never go wrong with cinnamon!
  • Hudsonville Limited Edition Cinnamon French Toast ice cream: it tastes like french toast but in ice cream form! The ice cream adds sweetness because of its sugar content and fat. 
  • eggs: binds the waffles together 
  • milk: adds moisture 
  • vegetable oil: keeps the waffles crispy
  • vanilla extract: enhances the other flavors

Extras: whipped cream, 1 banana, maraschino cherries, sprinkles, and syrup 

How to Make Belgian Waffles

  1. In a mixing bowl combine the flour, baking powder, salt and cinnamon. Stir until combined. Set aside.
  2. Measure 1 cup of ice cream and transfer to a microwave safe bowl. Microwave the ice cream for 30-45 seconds, until melty.
  3. In a larger mixing bowl combine the melted ice cream, eggs, milk, vegetable oil and vanilla extract. Whisk together. Gradually add in the dry ingredients, stirring to combine with a spatula. 
  4. Heat the waffle iron according to the manufacturer’s instructions. Spray the waffle iron with non-stick cooking spray before using. 
  5. Once the waffle iron is hot, add about 3/4 cup of the batter to the waffle iron, close and cook for 3-4 minutes. Once the waffle is golden in color, carefully remove the waffle and repeat until all the batter is gone. This recipe yields 4 Belgian sized waffles.

How to Make Waffles that Look Like Ice Cream Cones

  1. Using a knife, cut one of the waffles into the shape of an ice cream cone. 
  2. Use a second waffle to cut two circles. Arrange the cone and circles on a plate. Add whipped cream, a banana slice and sprinkles to each circle waffle piece. Add a scoop of Cinnamon French Toast Ice Cream to the plate and garnish with a maraschino cherry. You should be able to form 2-3 ice cream cone waffles from the 4 Belgian waffles.

Can I Use a Regular Waffle Maker instead of a Belgian Waffle Maker?

Yes, definitely! As long as you cook the waffles according to the manufacturer’s instructions to ensure they are done. The waffles will look different because Belgian waffles have deeper pockets and the traditional 4 sections, but the taste will be the same!

Tips

  • When you melt the ice cream, you will see chunks of waffle cone pieces. Add those right into the batter, no need to scoop them out. The will soften while the waffles cook. 
  • There will be little lumps in the batter and this is perfectly fine! It will not affect the outcome of the waffles. 
  • Be careful to not undercook or overcook the waffles. The more experience you have with your waffle iron the better you can get at predicting the right cook time.
