No one wants a dry, flavorless oatmeal cookie. You don’t have to worry about that when you follow my recipe for perfectly chewy peanut butter oatmeal cookies. My original oatmeal cookies always get rave reviews, so you know I won’t steer you wrong!

For the peanut butter version, I tested and tweaked the original recipe to incorporate the perfect amount of peanut butter. I also tested the amount of old-fashioned oats, perfecting the ratio of peanut butter to oats for ideal texture.

How to Make Peanut Butter Oatmeal Cookies

My foolproof steps below will set you up for success, even if you’re a new baker! Get ready to wow your friends and family and save this as your new go-to cookie recipe. Get the full recipe in the recipe card below, and keep reading for all my best tips! Here are the steps to this easy recipe:

  1. Prep oven and baking sheet. Preheat the oven to 350ºF and line a baking sheet with a silicone mat or parchment paper.
  2. Mix dry ingredients. In a medium bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon and salt. Set aside.
  1. Begin mixing wet ingredients. In the bowl of a stand mixer, or using a hand mixer, beat the butter, peanut butter, brown sugar, and granulated sugar on medium speed for 2 minutes until light and fluffy.
  1. Add remaining wet ingredients. Add the eggs and vanilla extract, and beat for 30 seconds.
  2. Combine wet and dry ingredients. Gradually add the dry ingredients on low speed until fully combined. The dough will be thick.
  1. Form cookie dough balls. Using a medium cookie scoop, form 2 tablespoon-sized dough balls and place about 8 cookies on the baking sheet, spaced evenly apart.
  2. Bake and cool. Bake for 9-11 minutes, or until the edges are set. The cookies may look underbaked when removed from the oven, but they will continue to cook on the hot baking sheet. Let the cookies cool on the sheet for 20 minutes before transferring them.

I love how simple these cookies are, and letting the peanut butter flavor shine, but if you’re having a certain craving or want variety for a special occasion, there are tons of options with these cookies. Here are some ideas:

  • Add raisins: Simply add-in some raisins, or try my oatmeal raisin cookie recipe (with a gluten-free option) for perfectly chewy oatmeal raisin cookies.
  • Add chocolate chips: If you want peanut butter chocolate chip cookies, simply mix-in some chocolate chips or try my chocolate chip oatmeal cookie recipe.
  • Add butterscotch chips: If you’re craving butterscotch flavor, mix-in some butterscotch chips.
  • Replace vanilla with maple: ​If you like maple flavor, swap the vanilla extract with maple flavoring.
  • Other add-ins: Some other add-ins you might want to try are peanut butter chips, shredded coconut or white chocolate chips.

Tips For Making Peanut Butter and Oatmeal Cookies

These will be your family’s new favorite cookies! For best results, follow my tried-and-true tips:

  • Use the old fashioned oats: Don’t use quick oats for this recipe. For best results, I recommend old-fashioned oats.
  • Use the right peanut butter: I do not recommend using natural peanut butter or crunchy peanut butter for this recipe. For best results in texture and flavor, use processed peanut butter.
  • Don’t over-bake: Don’t panic if the cookies still look under-baked when you pull them out of the oven. They continue to bake on the hot cookie sheet. If you leave them in the oven too long, they will over-bake.
  • Use a cookie scoop:​ I recommend using a cookie scoop to form the dough balls. This will keep them all uniform in shape and size, allowing them all to cook evenly as well.
  • Don’t place cookie dough on hot pans: If making multiple batches, alternate cookie sheets. If you place the balls of cookie dough on a hot baking sheet, the cookies are likely to spread before they can cook.
  • Properly measure the flour: For the right texture and consistency, be sure to properly measure your flour using the tips below.

How to Properly Measure Flour

The most accurate way to measure flour is to use a kitchen scale, weighing it in grams. 

If you don’t have a kitchen scale, follow this method. 

  • Aerate the flour with a whisk or spoon. Flour becomes heavy and compact as it sits. Aerating is the same as fluffing the flour, but not the same as sifting it. Do not sift the flour unless the recipe specifically calls for it.
  • Use a spoon to sprinkle the flour into the measuring cup. Do not tap the cup against the counter, as this will compact the flour.
  • Use the back of a butter knife to level off the excess.

Store leftover cookies in an airtight container for 5-7 days. Be sure to let them cool completely first. To keep them soft and moist, add a slice of bread! This trick allows the cookies to soak in the moisture from the bread over time so they don’t dry out.

These cookies also freeze well in a freezer-safe bag or container for up to 3 months. When you’re ready to eat them, thaw them in the refrigerator overnight.

  • 2 cups (240g) all-purpose flour
  • 2 cups (178g) old fashioned rolled oats
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, room temperature
  • ¾ cup (201g) creamy peanut butter,
  • 1 cup (213g) packed brown sugar
  • ½ cup (99g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat the oven to 350ºF and line a baking sheet with a silicone mat or parchment paper.
