Let’s not hide the facts – there is a whole can of beets in this smoothie!
You might be thinking “What is the girl who loves sugar, butter, and layered cakes doing with beets?!”
Time for honesty folks.. it’s all in the name of LOVE. Valentine’s Day is coming up and if you and your sweetie are the type of people who joined the local cross fit group and like to partake in meatless monday, this smoothie might be more of your style when it comes to Valentine’s Day.
Or if you’d rather give your kids something healthy for Valentine’s Day instead of some sugared love (aka – brownies, cheesecake, or cake) then we have the perfect smoothie recipe for you!
To achieve this fun layered effect, you’ll actually make 2 different smoothies and layer them in glasses. The whole recipe takes less than 10 minutes and I promise the hardest part is rinsing out your blender between making each smoothie.
The beet smoothie has canned beets, frozen berries (strawberries/raspberries/blueberries), one frozen banana, greek yogurt and your choice of liquid for blending. You could use water, milk, almond milk, orange juice, whatever you prefer as your liquid.
Of course the beet smoothie gets its intense deep coloring from the beets. But everyone is wondering – does it TASTE like beets?
The flavor of beets is present, but not too strong. You could always opt to add some honey or flavored yogurt instead of the vanilla yogurt to add additional sweetness.
The strawberry smoothie has frozen pineapple, one frozen banana, frozen strawberries, greek yogurt, and liquid for blending.
Using frozen ingredients definitely helps to create a thicker smoothie. But if your blender is not so great at chopping up frozen fruit, you might have to opt for fresh fruit, unless you like fruit chunks in your smoothie. Berry Beet Smoothie
Ingredients
Beet Smoothie
- 15 oz can whole beets
- 2 cups frozen strawberries/raspberries
- 1 frozen banana
- ½ cup plain or vanilla greek yogurt
- 1/4-1/2 cup liquid, milk, water, almond milk, orange juice
Strawberry Smoothie
- 1 frozen banana
- 1 cup frozen pineapple
- 1 cup frozen strawberries
- ½ cup plain or vanilla greek yogurt
- 1/4-1/2 cup liquid, milk, water, almond milk, orange juice
Instructions
Beet Smoothie
- Place all the ingredients in a blender and blend until smooth. Add more liquid to help it blend if it's too thick.
Berry Smoothie
- Place all the ingredients in a blender and blend until smooth. Add more liquid to help it blend if it's too thick.
To assemble
- Layer the smoothies in glasses. If desired, blend the smoothie using a straw. Top each smoothie with a toothpick filled with leftover fruits.

It’s a bit bitter on the top layer. I held my breath until I got to the lower level and it was worth it. It really does look great, and it’s not too sweetened. Nice job putting this together!

Canned vegetables are not as nutritional as one might think-sodium, plus who knows how long it has been sitting in that time can! No thanks, I’ll use fresh beet powder or roasted beets
You can totally use fresh beets!
The beet smoothie was sadly no good on its own. I ended up adding more banana and yogurt.
