Just an average smoothie folks… in a PINEAPPLE!
Totally not average anymore!
I should have put 2 straws in this smoothie because it’s definitely big enough for sharing.
Let’s break down the logistics. To make a pineapple berry smoothie in a pineapple cup you’ll need…
For the “cup”
-a pineapple
For the pineapple coconut smoothie
-frozen pineapple
-frozen mango
-cream of coconut
-liquid for blending
For the strawberry smoothie
-a frozen banana
-frozen strawberries
-frozen mangos
-liquid of blending
For garnish
-shredded coconut
-extra fruit to make a skewer garnish
-a fun straw or two ;)
I like to use frozen fruit when making smoothies for optimal thickness and frostiness.
To make a pineapple cup..
1. Cut off the top of a fresh pineapple
2. Use a knife to cut a circle near the outside edge of the pineapple. Cut the circle into triangles as the pineapple will be easier to remove.
3. Use a knife or spoon to scoop out the pineapple. Might take a few minutes to get all of the pineapple removed. Use the knife to help.
4. If you have problems getting the core out at the bottom of the pineapple, use a scissors to help.
Not too bad! I learned that making a pineapple cup is 100 times easier than opening a coconut. Note to self: a knife will not cut through a coconut :)
Gently pour the pineapple coconut smoothie into the pineapple cup, filling it less then half full. Add some strawberry smoothie on top of that layer, but do not fill the pineapple full.
Add another layer of the pineapple coconut smoothie, filling the pineapple almost full.
Add a few spoonfuls of strawberry smoothie to the top and create a swirl effect with a knife.
Gently place shredded coconut around the edge of the pineapple. Add in the fruit skewer and a straw and enjoy!

I LOVE when things are in pineapples! That’s really specific, I know, but the other day, my dad and I were talking about a Malaysian restaurant nearby, and I remember loving it solely because they served pineapple fried rice in a pineapple boat. It was epic. This smoothie is gorgeous!
Beth, the smoothie is AMAZING sounding and that cup is just adorable. I love how you always dress things up :)Â
You are a creative genius, my friend!
So beautiful! I love anything pineapple, so I know I’d adore this smoothie. So pretty served in the pineapple too.
By the way, in the instructions for the pineapple smoothie, it says frozen pineapple twice where the mango should be.
Thanks for letting me know!
Oh my god this is looking so yummy. will try it now. I mean right now ;) xx
Totally gorgeous in every way! Â I can’t afford a tropical vacation, so I think this summer I’ll console myself with this beautiful drink! Â =) Â
Just curious if anyone knows if the pineapple cups can be prepared ahead of time? I am going to a pool party on Sunday and thought these wluld be fun for the ladies, but I won’t have time Saturday night or Sunday morning to make them will they be ok to sit overnight in the fridge?
Hi Amanda! I would think that you could carve out the pineapple a day in advance, wrap it and store it in the fridge, but make the smoothie right before serving!
Wow! This one is perfect for summer. It looks yummy and gorgeous. I have to try this right now! Thank you for sharing! :)
