These no bake birds nest cookies are an Easter take on the classic no-bake chocolate peanut butter cookies made with quick oats. Form into nests and then topped with candy eggs, this is the perfect easy Easter themed treat!

Line 2 baking sheets with silicone mats or parchment paper.
Combine the butter, sugar, unsweetened cocoa powder and milk in a large pot over medium heat. Stir frequently so the butter melts until it reaches a boil. Once it starts to boil, allow it to boil for 60 seconds, stirring once.
½ cup (113g) unsalted butter, 1 ¾ cups (347g) granulated sugar, ¼ cup (21g) unsweetened cocoa powder, ⅓ cup (79ml) milk
Remove the pot from the heat and stir in the vanilla extract and creamy peanut butter. Then stir in the quick oats and shredded coconut, fully coating.

Use a cookie scoop to drop spoonfuls of the mixture onto the baking sheet.
Press your thumb lightly into the middle of the released scoop to make a small indent. Now it should resemble a nest.
Allow the cookies to set at room temperature for 20-30 minutes. To speed up the cooling process, you can place them in the fridge.
