Peanut butter banana bread is an easy quick bread that’s made with 10 common ingredients! It only takes 10 minutes to prep, plus you can add chocolate chips.
4spotty, over ripe bananas, mashedabout 1 & 1/3 - 1 & 1/2 cup mashed
½cup (135g)creamy peanut butter
½cup (118ml)vegetable oil
½cup (118ml)brown sugar
1tspvanilla extract
2largeeggs
2cups (240g)all purpose flour
1tspbaking soda
½tspcinnamon
½tspsalt
Instructions
Preheat the oven to 350º F.
In a mixing bowl mash 4 bananas - this should equal 1 & 1/3 cup to 1 & 1/2 cup mashed banana.

Add the creamy peanut butter, vegetable oil, brown sugar and vanilla extract, blend with an electric mixer on low.

Add the eggs, beat gently just until the egg yolks break.

In a small bowl combine the flour, baking soda, cinnamon and salt. By hand, gently fold the dry ingredients into the banana mixture using a spatula, just until combined.

Spray a loaf pan (either 9x5 or 8.5x4.5) with non-stick cooking spray. Pour the batter into the pan.
Place in the center of the oven and bake for 45 minutes. After 45 minutes, place aluminum foil over the bread and bake for 20-25 additional minutes or until a toothpick inserted in the center comes out clean. The total suggested bake time for a 8.5x4.5 inch pan is 65-70 minutes and 9x5 inch pan is 60-65 minutes.

I’ve made this bread with both regular and gluten free flour with awesome results on multiple occasions. I recommend King Arthur’s Gluten Free Measure for Measure Flour. Use it as a one for one substitute for regular flour.
