The best miami vice mocktail popsicles! Half strawberry daiquiri half pina colada layered in one glass. These are tropical, lava flow popsicles that everyone can enjoy since they are non-alcoholic.
In a blender combine the crushed pineapple (you can substitute pineapple juice), coconut milk and the optional coconut extract. Blend on high until smooth. Transfer this mixture to a bowl and rinse the blender.
20 oz crushed pineapple, 1/3 cup (79ml) coconut milk, 1/4 tsp coconut flavor
In a blender combine the strawberries, sugar and water. Blend on high until smooth.
2 cups (334g) strawberries, 1/4 cup (50g) sugar, 1/2 cup (118ml) water
One at a time, gently pour the 2 mixtures into the popsicle mold. Use a knife or popsicle stick to slightly blend the layers. Place the cover on the popsicle mold and add popsicle sticks.
Allow the popsicles to freeze overnight.
To get the miami vice/lava flow popsicles to release from the mold, fill your kitchen sink with room temperature water. Place the mold in the water, making sure the water does not go above the top of the mold.
Allow the mold to sit in the water for 60 seconds.
Begin to wiggle a popsicle free. If it feels tough, allow them to sit in the water longer, checking every 30 seconds or so. You don’t want the popsicles to become too melty. You just want to warm them up enough to release them from the mold.
Once all of the popsicles are removed from the mold, enjoy them or wrap them in plastic wrap and return to the freezer to eat later!
