Watermelon Marshmallow Slices

A fun no bake summer watermelon themed dessert – watermelon marshmallow slices!

Who loves watermelon?

I buy a watermelon each week during the summer, which is a lot of watermelon to eat by myself because Ryan isn’t a huge fan of it.

But I have learned to never, EVER buy a watermelon and slice it on the same day.

It won’t be ready!!

So here is my trick and it makes the best watermelon ever time: buy a watermelon, and put it on your counter, in the pantry, on your floor, where ever and leave it be for 1 week.

I know this takes patience. But trust me, once you cut into the watermelon it will be so juicy and red, you won’t even remember how long you waited!

How can you tell a watermelon is ready to be cut? It should sound dense (not echo-y) when you put your ear up to it and knock on the melon. 

But maybe you want a different kind of watermelon in your life – like a sweet, marshmallowy, chocolatey one!

Ever since I made these watermelon cupcakes I’ve been waiting for summer so I could make some more watermelon themed treats!

These watermelon marshmallow slices are easy to make and only require a few ingredients.

BUT let’s talk about the pink marshmallows. I bought four 10.5 oz bags of the mini fruit flavored marshmallows. The fruit variety usually has pink, yellow, orange and green colored marshmallows and because I wanted just pink marshmallows, I bought 4 bags and sorted through them, setting the pink ones aside. Call me crazy, but it was worth it and took less than 10 minutes.

I’m not 100% sure what I am going to do with the leftover yellow, orange and green marshmallows – you could use them to make fruity rice krispies!

Recipe notes

-I recommend melting the white chocolate chips in the microwave with a little bit of vegetable oil. Microwave on 50% power.

-once the white chocolate chips are melted and you’ve dyed it pink, quickly mix it with the marshmallows and mini chocolate chips. Then dump it onto the pan so you can press it out evenly before the chocolate hardens

Watermelon Marshmallow Slices

A fun no bake summer watermelon themed dessert – watermelon marshmallow slices!

Ingredients 

  • 5 ½ cups pink mini marshmallows*
  • 12 oz white chocolate chips melted
  • ½ tbsp vegetable oil
  • red and pink gel food coloring
  • ½ cup mini chocolate chips
  • 1 cup green candy melts and 1/2 cup yellow candy melts, melted with 1 tbsp vegetable shortening

Instructions 

  • Combine the pink marshmallows and mini chocolate chips in a large mixing bowl. Line a 9×13 inch pan with parchment paper.
  • In a microwave safe bowl, combine the white chocolate chips and 1/2 tbsp vegetable oil. Microwave for 1 minute on 50% power, stirring and repeating as necessary until the chocolate is melted. Add in some red and pink gel food coloring, stir with a spatula until combined. You can always add more to get a brighter color.
  • Pour the pink chocolate over the marshmallows and chocolate chips, and mixed until well coated. Transfer the mixture to the pan and use your hands (sprayed with a little bit of non-stick cooking spray) to press the mixture evenly into the pan.
  • Allow the chocolate to set completely before cutting into slices. Once set, remove the parchment paper from the pan, and cut the watermelon into triangular slices.
  • In a small pot over low heat, melt the green and yellow candy melts with 1 tbsp vegetable shortening. Stir until completely melted. Dip the ends of the watermelon slices into the green chocolate mixture, and place on a silicone baking mat to harden. Once harden, remove from the mat, place on a serving tray, and enjoy!
