Pineapple Strawberry Smoothie

Fresh pineapple strawberry smoothie in a pineapple cup! A very tropical drink!

Just an average smoothie folks… in a PINEAPPLE!

Totally not average anymore!

I should have put 2 straws in this smoothie because it’s definitely big enough for sharing.

Let’s break down the logistics. To make a pineapple berry smoothie in a pineapple cup you’ll need…

For the “cup”
-a pineapple

For the pineapple coconut smoothie
-frozen pineapple
-frozen mango
-cream of coconut
-liquid for blending

For the strawberry smoothie
-a frozen banana
-frozen strawberries
-frozen mangos
-liquid of blending

For garnish
-shredded coconut
-extra fruit to make a skewer garnish
-a fun straw or two ;)

I like to use frozen fruit when making smoothies for optimal thickness and frostiness.

To make a pineapple cup..

1. Cut off the top of a fresh pineapple
2. Use a knife to cut a circle near the outside edge of the pineapple. Cut the circle into triangles as the pineapple will be easier to remove.
3. Use a knife or spoon to scoop out the pineapple. Might take a few minutes to get all of the pineapple removed. Use the knife to help.
4. If you have problems getting the core out at the bottom of the pineapple, use a scissors to help.

Not too bad! I learned that making a pineapple cup is 100 times easier than opening a coconut. Note to self: a knife will not cut through a coconut :)

Gently pour the pineapple coconut smoothie into the pineapple cup, filling it less then half full. Add some strawberry smoothie on top of that layer, but do not fill the pineapple full.

Add another layer of the pineapple coconut smoothie, filling the pineapple almost full.

Add a few spoonfuls of strawberry smoothie to the top and create a swirl effect with a knife.

Gently place shredded coconut around the edge of the pineapple. Add in the fruit skewer and a straw and enjoy!

Ingredients

Pineapple Coconut Smoothie

  • 1 cup frozen pineapple
  • 1 cup frozen mango
  • 2 tbsp cream of coconut
  • liquid for blending, water, coconut water, milk, etc

Strawberry Smoothie

  • 1 frozen banana
  • 1 cup frozen strawberries
  • ½ cup frozen mango
  • liquid for blending, water, coconut water, milk, etc

Instructions 

To make a pineapple cup

  • In a blender, add equal amounts of frozen pineapple and frozen mango, the cream of coconut and liquid for blending. Start off with less liquid, adding more as needed.
  • Blend until smooth. Rinse the blender.

Strawberry Smoothie

  • In a blender, add the peeled frozen bananas, frozen strawberries, frozen mango and liquid for blending. Start off with less liquid, adding more as needed.
  • Blend until smooth.

To assemble
