Layered Melon Kiwi Jello Cups – a fun layered jello dessert for Spring or Summer!

Wowza – You guys like jello cups! We posted a recipe for layered strawberry jello cups as one of our Valentine’s recipes and it’s been pinned over 10,000 times in one short month!

A lot of people were commenting that our layered jello recipe reminded them of 1-2-3 jello, which I didn’t have a clue what that was until I googled it. I’m sorry if I’m making you feel old!

But I discovered that Jell-O 1-2-3 was a product that was available from 1969 until they discontinued it in 1996. I’m not sure why they discontinued it because it seemed awesome – one packet of jello mix would separate into 3 layers: a creamy top, a mousse-like middle, and plain jello on the bottom.

That product sure would have made my job easier when making these jello cups. Instead of having to buy 5 packets of jello and cool whip, I could have used two Jell-O 1-2-3 packets and called it a day!

Now that I’ve worked with jello a few times, I’m kind of addicted. From a food bloggers stand point, I love that it’s not messy. I can contain it in a little cup and it’s a breeze to photograph compared to ice cream, like these buster bars.

I actually have plans to work with jello again this week, not making layered jello cups, but something else! However, I can’t promise this is the last layered jello cup recipe I’ll share, they are just too fun.

Each layer of jello calls for one cup of boiling water. Instead of measuring out one cup and putting it in a microwave safe bowl to heat it up, I’ve found that putting water in my tea pot and heating it up that way is super quick. After the tea pot screeches, I measure out one cup and combine it with my jello mix.

The kiwi slices on top of the jello cups remind me of shark fins.. do you see that too? :)

Layered Melon Kiwi Jello Cups

Total Time:11 hours

Ingredients:

  • 5 packages of Melon Fusion Jello mix
  • 2 cups of Cool Whip, plus more for topping
  • kiwi slice, to top each parfait

Directions:

  1. Layer 1: Combine 1 cup boiling water in a bowl with a packet of jello mix. Stir until the mixture is dissolved. Add in one cup of cold water and stir. Evenly divide this mixture among the cups you’ll be using. Refrigerate until set, 1-2 hours.
  2. Layer 2: Combine 1 cup boiling water in a bowl with a packet of jello mix. Stir until the mixture is dissolved. Add in one cup of cold water and stir. Add in 1 cup of cool whip, and stir until mixed. Evenly divide this mixture among the cups you’ll be using, layering on top of the previous jello layer. Separation may occur, causing a lighter and darker layer. Refrigerate until set, 1-2 hours.
  3. Layer 3: Combine 1 cup boiling water in a bowl with a packet of jello mix. Stir until the mixture is dissolved. Add in one cup of cold water and stir. Evenly divide this mixture among the cups you’ll be using. Refrigerate until set, 1-2 hours.
  4. Layer 4: Combine 1 cup boiling water in a bowl with a packet of jello mix. Stir until the mixture is dissolved. Add in one cup of cold water and stir. Add in 1 cup of cool whip, and stir until mixed. Evenly divide this mixture among the cups you’ll be using, layering on top of the previous jello layer. Separation may occur, causing a lighter and darker layer. Refrigerate until set, 1-2 hours.
  5. Layer 5: Combine 1 cup boiling water in a bowl with a packet of jello mix. Stir until the mixture is dissolved. Add in one cup of cold water and stir. Evenly divide this mixture among the cups you’ll be using. Refrigerate until set, 1-2 hours.
  6. Top each parfait with a dollop of cool whip and a kiwi slice.
Depending on how many cups you are making and how thick you want each layer, you may have leftover jello from each layer. Either pour it in a different container to set or throw it away.
