I’ve been on a strawberry kick lately, and there’s more to come too! It’s hard for me to resist buying strawberries when they are on sale. Especially the good sales like 3 containers for $5 or 4 for $5!
After we shared the strawberry pretzel cheesecake salad I’ve had the combination of strawberries and pretzel on my mind. It’s naturally sweet and salty, obviously it’s a GOOD combo!
So I’m taking it back to the basics with this easy recipe. Only a few ingredients are needed!
These strawberry pretzel cheesecake bites are one cute dessert! They are pop-able and portable making them great for picnics or grad parties. And they assemble SO fast.
A few recipe notes:
-The strawberries can be washed and sliced ahead of time. Even a day in advance. Just store them in the fridge until you’re ready to use them.
-If you decide to slice the strawberries and pipe the cheesecake on right away, I would recommend blotting the sliced strawberries with a paper towel really well to remove access liquid. This will help prevent the cheesecake from slipping right off.
-Add the chopped pretzels right before serving, otherwise they can get soggy if topped too soon.
-I used a Wilton 1M piping tip to pipe the cheesecake.
-I got lucky and found jumbo, and I mean JUMBO strawberries when I went to the grocery store. The bigger the strawberries, the more cheesecake you can fit onto each one :)
