Spinach Pesto

Spinach Pesto
Spinach Pesto with Bowties – This is a delicious, healthy, super quick fix for dinner!

Something you should know, I am a sucker for bowtie pasta, it’s just so cute. And the sad news is that I can’t find gluten free bowtie pasta, so I buy regular gluten-filled bowties for Ryan and let him have all the fun. But this spinach pesto sauce could be paired with any type of pasta noodle.

When I say this is a super quick fix for dinner, I mean boil the pasta and while that’s happening, blend the rest of the ingredients in a food processor (or blender, but food processors are pretty handy!).

Spinach Pesto
Now that I am growing my own basil in my pallet garden (check out how I recycled an old shipping pallet into a garden wall here!) this recipe is super easy because it doesn’t even need fresh spinach, it calls for frozen.

Oh yeah, and it calls for these guys – pine nuts!

Spinach Pesto

Spinach Pesto

Ingredients

  • 12 oz pasta
  • 1 package, 10 oz frozen chopped spinach, thawed
  • 1/3 cup grated parmesan cheese, plus more for garnish
  • 2 tbsp pine nuts
  • 2 garlic cloves, mined
  • 1 tsp grated lemon zest
  • 2 tbsp juice from lemon
  • 1/4 cup olive oil
  • 5-6 basil leaves

Instructions

  1. Cook the pasta until al dente.
  2. While the pasta is cooking, put thawed spinach, parmesan, pine nuts, garlic, lemon zest and lemon juice in a food processor.
  3. Process until a paste forms.
  4. While it's running, add the olive oil, process for 1 minute.
  5. Drain the pasta and return to the same pot.
  6. Add the spinach pesto sauce to the pasta, toss and serve with additional parmesan cheese.

This is one of my favorite meals. May I suggest – Give those pine nuts a little toasting and it kicks up the flavor so much. Be careful they will burn if you don’t watch carefully.

Let’s just say I’ve been freezing a lot of pesto ;). This looks so refreshing and veggie filled! I enjoy that you used bowtie noodles. They’re my favorite and I think they’re way under used.

Can you use fresh baby spinach or does it have to be frozen?

    • The First Year Blog — September 8, 2013 at 10:05 pm

The original recipe called for frozen, and I have only tried it with frozen. But I bet it would be okay!

I love pesto sauce. I’ve never tried it with spinach before. This is definitely a great alternative to seasons when fresh basil is not in abundance. Thanks for the idea! *Stopping by from the Posed Perfection Link Up*

  11. This looks amazing and it reminds me of the recipe I linked to the Pin It Party called Spinach Surprise! Looks like a must try for my family! I pinned it for sure! :)

You have to hover over the text for the hyper link to appear. I’ve been trying to change that but can’t figure it out quite yet.
