This happened – oreo pancakes. I couldn’t resist. Pancakes for breakfast is pretty much an excuse to eat cake dipped in sugar.

But these are incredible, as I am sure you can imagine. I’m going to fuss up- I’m not a big fan of pancakes for breakfast. I’d rather enjoy a piece of peanut butter toast then overload my system first thing in the morning. But I am not opposed to pancakes for second breakfast :-)

Here they are pre-oreo glaze. Let’s be real, the glaze is a bit much, I mean totally yummy, oreoness but I think next time maple syrup will do.

Oreo Pancakes

Yield: about 15 pancakes, using 2 tbsp of batter per cake

Ingredients

    Oreo Pancakes
  • 1 cup all-purpose flour, leveled (I use Cooqi Gluten Free)
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1 large egg
  • 3 tablespoons vegetable oil
  • Dash of vanilla
  • 6 oreos, crushed (or the knock off gluten free ones)
  • Oreo Glaze
  • 3/4 cup powdered sugar
  • 2 tbsp milk
  • 2 oreos, crushed

Instructions

    Oreo Pancakes
  1. In a bowl, whisk together the milk, oil, egg, and vanilla.
  2. Add all of the dry ingredients to the milk mixture and whisk just until incorporated, small lumps are fine.
  3. Crush/chop the oreos and add to the batter, and mix just until incorporated.
  4. Heat a large skillet to medium heat and spray the pan before adding batter. I sprayed the pan each time before adding more batter.
  5. For each pancake, spoon 2 tablespoons of batter into the skillet.
  6. Cook until the surface of pancakes have some bubbles, or about 2-3 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more.
  7. Oreo Glaze
  8. Mix the powdered sugar and milk together until creamy, and not lumpy.
  9. Add in the crushed oreos, mix.
  10. Drizzle over pancakes.

    Oh my goodness. I’m not a huge fan of pancakes for breakfast, eggs and bacon work for me. But every once in a while I wake up and want something sweet so I’ll make some. These look fantastic. Now only if I had some oreos :)

  9. WOW, these look so good. I want these for my next birthday breakfast. But my birthday is not until March so I might need to test them before that just to make sure…yes, I think I should probably test them tomorrow. ;-) Here’s another idea…these would be good for breakfast for the kids the morning after a sleepover as well! Hmmm…I am sure I could come up with a bunch of other occasions if I keep thinking about it!!

    I love these, Beth! I like that you used GF flour. And I didn’t even know there were GF Oreo’s. I will have to look for those. I’m not on a GF diet but I do like to make GF meals sometimes. And I am trying to cut out dairy, for the most part, so I would use soy milk or rice milk instead. Such a great recipe! Pinning and sharing on Facebook tomorrow.
