These green monster smoothie muffins are pretty fun.

How often do you eat green muffins? Exactly.. it’s not very normal.

But I want you to feel really good about eating these because their full of spinach, strawberries and bananas!

They are called smoothie muffins because the basis of a lot of smoothies consist of bananas, a couple handfuls of spinach and some strawberries/other berries.

We just added in some egg and flour and viola – SMOOTHIE muffins!

Plus the base of the muffins are made in a blender, just like a smoothie!

Some of you might be skeptical, but don’t let the green color deter you. You can’t really taste the spinach, but lucky for you, you can know that it’s in there and healthy for you.

Plus if you eat muffins like I do (muffin queen right here!) you’ll feel great knowing that these are good for you! I even surprised myself and there are ZERO chocolate chips in this recipe.

But I wouldn’t put it pass me to add in some chocolate chips if I felt like I needed it :)

The recipe is simple to make – 10 ingredients: bananas, spinach, strawberries, all purpose flour, honey, an egg, greek yogurt, baking soda, salt and peanut butter.

You’ll blend the bananas, strawberries, spinach, greek yogurt, honey and peanut butter in a blender until everything is smooth, you don’t want chunks!

Then you’ll add in the egg, flour, baking soda and salt. They bake up fast and I bet they will disappear fast too!

Green Monster Smoothie Muffins

Yield: 12 muffins

Total Time: 30 minutes

Ingredients:

  • 2 ripe bananas
  • 4 strawberries
  • 1 & 1/2 cups packed baby spinach
  • 1/4 cup greek yogurt
  • 1/4 cup honey
  • 1 tbsp peanut butter
  • 1 egg
  • 1 cup all purpose flour or whole wheat flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt

Directions:

  1. Preheat the oven to 350º degrees F.
  2. In a blender, puree the bananas, strawberries, spinach, greek yogurt, honey and peanut butter until smooth. You don't want any chunks. Once blended pour the mixture into a bowl.
  3. Stir in one egg.
  4. Gradually add the flour, baking soda and salt. Mix until just combined.
  5. Place muffin liners in a muffin pan. Scoop the batter into the pan, filling about three quarters full.
  6. Bake for 16-19 minutes or until a toothpick comes out clean.
  7. Allow muffins to cool before removing them from the pan. Store in an airtight container.
