Creamy Strawberry Kiwi Popsicles

I’m eating strawberries for breakfast, lunch, and dinner and I still have extra! But no complaints here because all of those extra strawberries get turned into delicious summer recipes.

Homemade popsicles are the perfect thing to make to use up any summer fruit and they really are the epitome of summer! Enjoy these last few warm-weather weeks we have and chill out with these Creamy Strawberry Kiwi Popsicles. Get creative with any delicious summer fruit you love!

To make your own homemade popsicles you’ll need 2 pieces of equipment – a popsicle mold and popsicle sticks. This is the popsicle mold I use, but you can find some pretty neat ones where the molds are shaped like ice cream cones, sharks, bunnies, and even robots! For the popsicle sticks, you can buy those at your local craft store.

Freezing pureed fruit by itself can cause the fruit mixture to become icy and super frozen, like an ice cube. Have you ever experienced that? I have and it’s not so fun when you’re expecting a smooth, frozen treat!

So what’s the secret? I learned that you can incorporate corn syrup into your popsicles to keep them smooth and from freezing too hard. I used Karo® Syrup to add creaminess and smoothness to these popsicles, and it’s definitely my secret ingredient when making homemade popsicles!

Use a spoon to layer the fruit mixtures inside the mold. They are easy to assemble, and don’t worry about everything being perfect because you want the layers to swirl together.

Creamy Strawberry Kiwi Popsicles

Homemade popsicles are the perfect thing to make to use up any summer fruit and they really are the epitome of summer! Prolong the end of summer and chill out with these Creamy Strawberry Kiwi Popsicles. 

Ingredients 

Kiwi Layer

  • 4 kiwis, diced
  • 2 tablespoon Karo® Light Corn Syrup
  • 1 tablespoon sugar

Strawberry Layer

  • 1 ½ cups chopped strawberries, diced
  • 2 tablespoons Karo® Light Corn Syrup
  • ½ tablespoon sugar

Creamy Layer

  • 1 ½ cups vanilla yogurt
  • 2 tablespoon Karo® Light Corn Syrup

Instructions 

  • Combine the diced kiwi with 2 tablespoons of corn syrup and 1 tablespoon of sugar in a blender or food processor and puree until smooth. Transfer to a small bowl and set aside.
  • Combine the diced strawberry with 2 tablespoons of corn syrup and 1/2 tablespoon of sugar in a blender or food processor and puree until smooth. Transfer to a small bowl and set aside.
  • Combine the yogurt with 2 tablespoons of corn syrup, stir until smooth.
  • Spoon mixtures into popsicle molds in alternating layers. Swirl layers using a thin knife. Add popsicle sticks and freeze until solid, about 12 hours or overnight.
  • To get the popsicles to release from the mold, fill your kitchen sink with room temperature water. Place the mold in the water, making sure the water does not go above the top of the mold.
  • Allow the mold to sit in the water for a few seconds.
  • Begin to wiggle a popsicle free. If it feels tough, allow them to set in the water a few more seconds.
  • Once all of the popsicles are removed from the mold, enjoy or wrap the extras in plastic wrap and return to the freezer.
