Carrot Cake Oatmeal

Carrot Cake Oatmeal

Total Time: 15 minutes

Yield: 1 bowl

  • 1/4 cup finely grated or rough pureed carrots
  • 1/4 cup milk or almond milk, or more depending on the consistency you like
  • 1/2 tsp cinnamon
  • 1/8 tsp ground ginger
  • 1/8 tsp nutmeg
  • 1/4 cup oats
  • 1/2 tsp vanilla extract
  • 2 tbsp chopped pecans
  • 1 tbsp maple syrup, or more to taste
  • Optional: raisins

  1. Finely grate the carrots till you have 1/4 cup. Or you can rough puree the carrots and measure out 1/4 cup. You still want some carrot pieces, not baby food carrots. ?
  2. In a small pot over medium heat, heat and stir the milk, cinnamon, ginger, nutmeg.
  3. Add in the carrots and oats, stir. Cook for 6-7 minutes, stirring.
  4. When the mixture has thickened up, remove the pot from the heat, adding in the vanilla, pecans and maple syrup.
  5. Scoop into a bowl and enjoy. Add more spices to your liking.

Carrot cake for breakfast sounds absolutely perfect! This looks gorgeous and delicious, not to mention the nutrition aspect. Great idea, Beth. I’ve added pumpkin puree to oats before but don’t think I’ve ever tried adding carrots. Will have to try this this weekend. My daughter and I eat oats, though usually overnight soaked oats, every morning.

Carrot Cake for breakfast sounds like the best idea I’ve heard all day! Great idea and, since my husbands favorite dessert is carrot cake, this is sure to become a favorite. I can use gluten-free oats and it will be perfect for the whole family.

I use gluten free oats too! It’s so nice we can enjoy normal people food :-)
