While photographing noodles (especially with red sauce) isn’t my favorite, there should be fireworks and a parade for this dish because it is that good. Whenever I ask my husband for dinner suggestions, he says mostaccioli!
Ingredients
8 ounces (or about 3 cups) uncooked mostaccioli
1 egg
2 cups (16 ounces) 1% cottage cheese
2-3 handfuls of fresh spinach, chopped (can use about 10 oz of frozen, make sure to squeeze dry)
1 cup shredded mozzarella cheese
2/3 cup shredded parmesan cheese
salt, pepper, parley, and oregano to taste
2 1/2 cups (or 1 jar) meatless spaghetti sauce
Cook pasta according to package directions. Meanwhile, in a large bowl, combine the egg, cottage cheese, spinach, mozzarella cheese, parmesan cheese, parsley, oregano, salt and pepper; set aside.

Drain pasta and stir in the spaghetti sauce. Layer half of the pasta mixture in a greased 11-in. x 7-in. baking dish.

Layer with all of the cheese/spinach mixture, then add the remaining pasta mixture.


Cover and bake at 350° for 35-40 minutes or until bubbly. Uncover; sprinkle with a little cheese if desired and bake 5 minutes longer or until cheese is melted.
