This recipe is so easy to throw together, it tastes great, and you can put practically anything in it!
1 can (15 oz) black beans
1 cup corn
1/2 small onion, chopped
1 bell pepper, chopped
Taco seasoning or cumin
If you’re using small tortillas you can probably get 12, if you’re using large tortillas about 7.
Get out a tortilla (or 2 or 3!) and begin to put everything in it. It doesn’t really matter which order you put the ingredients on but typically I do.. black beans, corn, pepper, onion, cumin, avocado, cheese, and cilantro.

Crisp and brown the tortilla on both sides in a skillet over medium heat, no need to spray the skillet. If you want to easily cut the quesadillas, use a pizza cutter. Serve with salsa, mmm black bean quesadillas!
